My favourite time of year has arrived! The NFL is back! This is one NFL season that I will never forget, thanks to my recent trip to Denver to see my Broncos play against the defending Superbowl champion Ravens.
My husband decided that we should fly to Denver for one night to see the game. I was resistant at first because I had NEVER been away from Ruby for even one night. Well, I’m just glad my husband is pushy because he “convinced” me to go and I didn’t regret one minute of it. (Well there WAS that moment when the text came in saying that Ruby was stung by a wasp and ended up in the clinic with a swollen hand…But I knew she was in good hands with grandma and I couldn’t do anything about it from Denver anyway!)
Sean and I spent a great day walking around downtown (which was all decorated for the NFL season opener), sampling some great food and beer. We really enjoyed our lunch at a place called FreshCraft. I had fried pickles, veggie sliders and a few beers for lunch and it was all fantastic. This is a picture of their glorious selection of draft beer. Too bad we couldn’t have tried them all 🙂
It was an amazing, whirlwind, 24 hours in Denver, made even better by the 49-27 win! I have seen Peyton Manning play live in 3 different cities now and he hasn’t lost yet. However, seeing him throw 7 TD passes was a nice surprise! I loved the chemistry he had with his new, ex-patriot receiver, Wes Welker too. This was our view from the upper deck at mid field:

Now that’s my first NFL focused post. This blog really could be called the “Baking-NFL loving-Vet”! Stay tuned…And Go Broncos!
Now here is a recipe that myself and my co-workers really enjoyed. It’s super easy too. I think the instant pudding mix makes this dessert bar really moist and you can’t go wrong with cream cheese frosting.
1 (15.25 oz) box Vanilla Cake Mix
1 box instant Vanilla Pudding
3/4 cup butter, melted
1/2 cup light brown sugar
1 Tbsp water
2 Tbsp cinnamon
1 (8 oz) block cream cheese, room temperature
1/4 cup butter, room temperature
5 cups powdered sugar
1 tsp vanilla
Cinnamon Sugar garnish:
3 Tbsp sugar + 1 tsp cinnamon
Directions for the bars:
Preheat oven to 350°. Spray 9×13 baking dish with cooking spray, set aside.
In large bowl combine all ingredients. Stir until there are no lumps.
Spread into prepared baking dish and bake 20-25 minutes until edges are golden.
Let cool completely before frosting.
For the frosting:
In mixing bowl beat together cream cheese, butter and vanilla until smooth. Slowly add the powdered sugar and continue beating for 1-2 minutes until smooth and creamy.
Spread on cooled bars. Sprinkle cinnamon sugar mixture on top for garnish
Cut into squares when ready to serve. Enjoy!
